
This banana nut bread is amazing & so easy to make! It’s soooooo moist. I just love it & everyone in the family loves it too – including the toddler (that’s a big accomplishment). It’s also lower in sugar & calories as I sub half the sugar with Truvia (a Stevia blend). You really cannot tell that part of the sweetener is not sugar – there are no weird tastes or aftertastes. In a lot of baking recipes, you can tell but not this one which is another reason I love this banana nut bread so much!
Ingredients
- 1 1/2 cups walnuts
- 1 1/4 cups organic all-purpose flour
- 1/2 cup organic sugar (I buy this at Sam’s Club for a better price)
- 1/2 cup Truvia (powdered stevia blend – can sub for sugar if you prefer)
- 1 tsp baking soda
- 2 large eggs
- 1/2 cup canola or vegetable oil
- 3 medium overripe bananas
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp salt
Directions
- Preheat oven to 350 degrees. Coat an 8×8 inch glass pan with canola/vegetable oil and use a paper towel to spread oil evenly.
- In a medium bowl: whisk the flour with the baking soda, cinnamon, and salt.
- In another bowl: combine the sugar, eggs, and oil until light-colored and creamy. Add mashed bananas and vanilla and beat until smooth. Stir in the dry ingredients until thoroughly blended. Fold in the walnuts.
- Pour batter into the prepared pan and bake in the middle of the oven for 50-60 minutes. Let cool.
